Italian Deluxe Piselli
Italian Deluxe Piselli is an moderately easy dinner. Made with 2 scallions, chopped into 1/2-inch pieces, 1/2 lb. english peas (fresh in season), 1/2 lb. asparagus, cut into 1-inch pieces, olive oil and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Pour 1 to 2 tablespoons olive oil in 7-inch nonstick skillet frypan.
Heat to hot.
Put in scallions and peas.
Cook 5 to 10 minutes.
Add asparagus and cook until tender (10 to 15 minutes). Water may be added during cooking to prevent drying of vegetables. Serve hot as side dish.
Salt and pepper may be added to taste. Season with sprinkle of dried basil, if desired.
