Island Cookies
Island Cookies is an moderately easy dinner. Made with 1 2/3 c. all-purpose flour, 3/4 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt and 3/4 c. butter or margarine, softened (1 1/2 sticks), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine flour, baking powder, baking soda and salt in small bowl.
Beat butter, brown sugar, granulated sugar and vanilla in large mixing bowl until creamy.
Beat in egg.
Gradually blend in flour mixture.
Stir in morsels, coconut and nuts.
Drop by slightly rounded tablespoonfuls onto ungreased baking sheets. Bake in preheated 375Β° oven for 8 to 11 minutes or until edges are lightly browned.
Let stand for 2 minutes.
Remove to wire racks to cool completely.
Makes about 3 dozen.
