Island Collards

Made with 2 lb. collard greens, with tough stems removed and leaves well washed, 1/4 lb. slab bacon, cut into 1/8-inch cubes, 1 tbsp. finely minced garlic, salt and pepper to taste and 1/4 c. defatted chicken broth, this recipe delivers authentic, satisfying flavors. Stack 4 to 6 leaves and roll them up diagonally.
Thinly slice the leaves crosswise.
