Irish Potato Rolls
Irish Potato Rolls is an moderately easy dinner. Made with 1 1/2 c. lukewarm potato water, 1/2 c. sugar, 1 1/2 tsp. salt, 1 pkg. dry yeast and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together potato water, salt and sugar.
Sprinkle yeast on top and stir to dissolve.
Add eggs and shortening.
Mix mashed potatoes in gradually and enough flour for a stiff batter; beat until smooth.
Add remaining flour and knead until smooth and elastic.
Place in refrigerator in a greased, covered container. Take out about 2 hours before needed.
Shape and let them rise about 1 or 1 1/2 hours.
Butter if you wish before baking at 400Β° for 15 minutes.
This will keep in the refrigerator for several days.
