Irish Potato Cake
Irish Potato Cake is an impressive dinner. Made with 2 cups sugar, 1 cup butter, 4 eggs, separated, 1 cup sour cream and 2 squares chocolate, melted, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Grease and flour tube pan and set aside.
Mix baking soda and sour cream.
Cream butter and sugar.
Add egg yolks, sour cream mixture, chocolate, walnuts, raisins and vanilla.
Mix well.
Sift together flour, cinnamon, salt and ginger. Add to creamed mixture.
Add mashed potatoes.
Mix well.
Beat egg whites and gently add to batter.
Pour into tube pan and bake at 350 degrees for 1 hr. and 30 minutes or until tester comes out clean.
