Irish Fruit Soda Bread
Irish Fruit Soda Bread is an impressive dinner. Made with 2 c. brown sugar, packed, 1 (15 oz.) box seedless raisins, 1 (15 oz.) box golden raisins, 1 (no. 2) can crushed pineapple and 2 to 2 1/2 c. water, this recipe delivers authentic, satisfying flavors. Combine first 9 ingredients in a saucepan, including juice from pineapple.
Bring to a boil over medium heat.
Cook 10 minutes, then reduce heat and simmer 5 minutes.
Into a large mixing bowl, sift together dry ingredients and spices.
Add cooled raisin mixture and eggs.
Beat well.
