Impossible Chicken Pie
Impossible Chicken Pie is an moderately easy dinner. Made with 1 broiler-fryer, cut in parts, 2 c. water, 2 tsp. salt, divided, 1 c. shredded mozzarella cheese, divided and 1 (6 oz.) can tomato paste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In deep saucepan, place chicken. Add water and 1 teaspoon of salt.
Cover and simmer about 45 minutes or until fork can be inserted in chicken with ease. Cool. Separate meat from bones. Discard bones and skin. Cut chicken in bite size pieces and place in a large bowl.
Add 1/2 cup of the Mozzarella cheese, tomato paste, oregano and basil. Stir to mix and set aside.
