Icebox Fruitcake
Icebox Fruitcake is an moderately easy dessert you can prepare in about 1 hour 40 minutes. Roll crackers into crumbs.
Chop cherries and pecans.
Melt margarine and marshmallows.
Combine marshmallow mixture with crumbs and cherry liquid.
Add cherries, raisins and nuts.
Mix well.
Form into long roll on wax paper (will be sticky).
Roll in wax paper and then roll in aluminum foil.
Refrigerate.
Cut into slices as needed.
Yield: 3 large rolls.
