Icebox Cookies
Icebox Cookies is an easy dinner. Made with 3/4 c. shortening, melted, 2 eggs, well beaten, 2 c. brown sugar, firmly packed, 3 1/2 c. self-rising flour and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt shortening and cool.
Combine eggs and sugar and beat. Add shortening and blend, then add flour and vanilla and blend. Shape into 3 rolls, 2 inches in diameter.
Wrap each in wax paper. Store in refrigerator overnight.
Cut in thin slices with sharp knife and place on baking sheets, greased.
Bake at 375Β° for 12 to 15 minutes.
Makes 5 dozen.
