Hot Water Cornbread
Hot Water Cornbread is an easy dinner. Made with 2 c. self-rising meal, hot boiling water and enough cooking oil to cover skillet, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Use medium size mixing bowl. Pour the meal into the bowl. Stir in enough boiling water to mix well but in a patting consistency. Scoop about 1 heaping tablespoonful of mixture in hand (carefully, as this is hot!).
Pat out into a pancake like patty.
Cook on top of stove in hot skillet covered with about 1/4-inch of shortening or oil. Brown on both sides.
I like mine slightly crispy.
Serve with butter, jelly or syrup.
Makes about 8 patties.
