Hot Potato Salad
Hot Potato Salad is an moderately easy dinner. Made with 6 medium boiling potatoes (2 lb.), 10 slices bacon, 1/2 c. chopped onion, 1/2 c. beer and 1 to 1 1/2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place unpeeled potatoes in large saucepan.
Add water to cover. Boil 20 minutes or until tender.
Peel and slice.
Turn into serving dish.
Cook bacon until crisp.
Leave drippings in pan. Crumble bacon over potatoes.
Add onion to skillet.
Saute until tender.
Add beer, sugar, salt and celery seed.
Heat to boiling, stirring occasionally.
Pour over potatoes.
Toss lightly.
