Hot Pasta Salad
Hot Pasta Salad is an moderately easy dinner. Made with 2 tbsp. balsamic vinegar, 2 tsp. olive oil, 1/8 tsp. salt, 1 medium green pepper, cut into 1/4-inch strips and 1/2 medium red onion, cut thinly (1 c.), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a small bowl combine vinegar, oil and salt.
Set aside. Spray 12-inch nonstick skillet with nonstick vegetable cooking spray.
Heat skillet over medium heat.
Add pepper, onion and poppy seed.
Cook for 4 to 6 minutes or until vegetables are tender, stirring frequently.
Reduce heat to medium-low.
Add linguine and tomato.
Cook for 1 to 1 1/2 minutes or until hot, stirring frequently.
Add vinegar mixture.
Toss to combine. Serve hot.
