Hoppin John 'n' Sausages
Hoppin John 'N' Sausages is an moderately easy dinner. Made with 1 lb. sweet italian sausage, sliced, 1 medium onion, chopped, 1 smal green pepper, chopped, 1 1/2 c. long grain rice, cooked and 2 (10 oz.) pkg. frozen black-eyed peas, cooked and drained, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Bake sausage one layer deep in pan, uncovered, in 325° oven for 1 hour.
Drain sausage drippings into large skillet; stir-fry onion and pepper until tender.
Place in large bowl.
Add sausage, rice, peas, salt and pepper and bacon drippings.
Pour in casserole and bake at 325° for 1 hour.
Makes 8 servings.
