Honeymooner's Casseroles
Honeymooner'S Casseroles is an moderately easy dinner. Made with 1 1/2 c. frozen hash brown potatoes, 1/2 c. shredded monterey jack with jalapeño peppers, 1/2 c. diced, cooked ham, 1/2 c. shredded swiss cheese and 2 beaten eggs, this recipe delivers authentic, satisfying flavors. Thaw potatoes.
Press potatoes between paper towels to remove excess moisture.
Grease 2 (8 ounce) casseroles.
Arrange potatoes evenly in bottom of each.
Bake, uncovered, at 400° for 20 minutes.
Cool 10 minutes.
Reduce oven to 350°.
Add cheeses and ham.
