Homemade Zucchini Cookies
Homemade Zucchini Cookies is an moderately easy dinner. Made with 1 stick unsalted butter, 1 c. sugar, 1 large egg, beaten lightly, 1 c. grated zucchini and 2 c. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In a large bowl, combine together butter and sugar until light and fluffy.
Beat in egg and stir in zucchini.
Add baking powder, spices and flour.
Mix well and then add two of the following 3 ingredients: either raisins, chocolate chips or the chopped walnuts.
I prefer 1 cup of the chocolate chips and 1 cup of the raisins.
Bake approximately 10 minutes or until cookies are firm to touch and the edges are brown at 375Β°.
