Holly'S Potato Soup is an moderately easy dinner. Made with 6 to 8 medium potatoes, 1 medium onion (optional), 1 tsp. salt, 1/2 lb. velveeta cheese, cubed (do not substitute) and pepper to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel and dice potatoes (leave chunky).
Chop onion and celery. Place in a 2-quart heavy saucepan.
Add water barely to top of potatoes.
