Holiday Fruit Cake
Holiday Fruit Cake is an moderately easy dinner. Made with 1 pkg. white cake mix, 4 eggs, 1/2 c. water, 2 tsp. salt and 2 tsp. lemon or brandy extract, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine cake mix, 1 egg, water, salt and lemon or brandy extract.
Beat until smooth.
Add remaining eggs, one at a time, beating well after each one.
Sift flour over fruits and nuts.
Mix well and stir into batter.
Spray 2 loaf pans with vegetable cooking spray.
Fill with batter; press down.
Bake in very slow oven (275Β°) for 2 1/2 or 3 hours or until done.
(Place shallow pan of hot water on bottom of oven during baking.)
Cool; remove cake from pans.
Makes 4 1/2 pounds fruitcake.
