Hodge Podge
Hodge Podge is an easy dinner. Made with onions, cut in small chunks, carrots, sliced crosswise, potatoes, cut in medium chunks, string beans (green), cut up or use frozen beans and all-purpose cream, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Layer these vegetables in the order listed in a kettle the size and amount of vegetables suitable for your family.
On top, put 2 or 3 sticks of oleo and add enough water to see around vegetables.
(You want it to cook down to a small amount). Cover and cook until almost tender; uncover to boil water way down.
Add enough cream to cover well; stir carefully.
Serve with hot biscuits!
