Hermit Cake
Hermit Cake is an moderately easy dinner. Made with 1 lb. butter, softened, 1 1/2 lb. flour (3 c. plain), 6 eggs, separated, 2 tbsp. cinnamon and 1 lb. dates, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cream butter and sugar.
Add egg yolks well beaten.
Sift flour with cinnamon twice, then add to creamed mixture.
Dissolve baking soda in lemon juice and add to mixture.
Beat well.
Fold in stiffly beaten egg whites.
Stir in walnuts, dates and vanilla. Bake in a wax paper lined tube pan at 250Β° for 2 1/2 to 3 hours or until baked through.
