Herley Grilled Potatoes
Herley Grilled Potatoes is an moderately easy dinner. Made with 3/4 c. margarine or butter, 1/4 c. finely chopped celery, 1 tsp. dried oregano leaves, crushed, 1/2 tsp. salt and 1/4 tsp. garlic powder, this recipe delivers authentic, satisfying flavors. In saucepan, melt butter.
Add celery; cook until tender.
Stir in oregano, salt, garlic powder and pepper.
Cutting not quite through, slit potatoes into 1/2-inch slices.
Place each potato on a piece of foil large enough to wrap potatoes.
Drizzle about half of margarine mixture into slits.
Insert a half slice of onion into each slit.
Drizzle with remaining margarine.
Bring edges of foil together; seal securely with double foil.
Grill over hot coals 40 to 50 minutes.
Makes 6 servings.
