Herbed Cornish Hens
Herbed Cornish Hens is an easy dinner. Made with 1/2 tsp. kosher salt, 3/4 tsp. sage, 1/2 tsp. each: allspice, black pepper and dried rosemary, crumbled, 2 cornish hens (approximately 1 1/2 lb. each), split and skinned and 1 tbsp. plus 1 tsp. olive oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a small bowl, combine salt, sage, allspice, pepper and rosemary.
Coat the hens with oil, then with the herb mixture, rubbing them well.
Cover the hens with plastic wrap and refrigerate 3 hours.
Preheat broiler.
Set rack 8 inches from heat.
Arrange hens on broiler pan and broil 8 minutes; turn over and broil 7 to 8 minutes longer.
