Herbed Black-Eyed Pea Salad
Herbed Black-Eyed Pea Salad is an moderately easy salad you can prepare in about 1 hour 30 minutes. Made with c. fresh shelled black-eyed peas, bacon, large clove garlic, minced, green onions, sliced and sweet red or green pepper, minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook peas in boiling salted water 15 to 20 minutes or until peas are tender.
Drain and rinse under cold water until cool. Drain well; set aside.
Cook bacon in a large skillet until crisp. Remove bacon, reserving drippings in skillet.
Crumble bacon; set aside.
Add garlic to drippings in skillet; saute 1 minute.
Add green onions and red pepper; saute until tender.
Cool completely. Combine bacon, pepper mixture, peas, mayonnaise, vinegar, oregano and pepper; stir well.
Serve at room temperature.
