Herbed Baked Eggs
Herbed Baked Eggs is an moderately easy dinner. Made with 4 thin slices ham, 1/4 c. plain yogurt, 2 tsp. chopped chives, 3/4 c. shredded cheddar cheese and sprigs of herbs (to garnish), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 375°.
Line 4 greased ramekin dishes (small soufflé) with ham.
In a bowl, beat together eggs, yogurt and mustard.
Mix together chives and parsley.
Stir 1/2 of herb mixture and 1/4 cup cheese into egg mixture.
Spoon into dishes and top with remaining cheese and herbs.
Bake until golden brown and set, about 25 to 30 minutes.
