Heather's Reuben Casserole
Heather'S Reuben Casserole is an moderately easy dinner. Made with 3 c. cubed rye bread, 1 c. water, 3 eggs, 1 lb. corned beef, sliced and chopped and 1 tsp. caraway seed, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a large bowl, mix together bread, water, eggs, corned beef, caraway seed, salt and pepper.
Place half of the mixture in a large shallow casserole dish that has been sprayed with nonstick spray coating.
Spread evenly over bottom. Spread sauerkraut over mixture.
Spread dressing over the sauerkraut.
Spread with remaining corned beef mixture and sprinkle with Swiss cheese. Bake at 350Β° for 35 to 45 minutes or until golden brown and set. Serves 6 to 8.
