Cut pork in 3/4 inch cubes.
Brown slightly in oil and sprinkle with soy sauce.
Place meat in 2-quart casserole.
Drain pineapple, saving syrup.
Add pineapple to meat.
Add pineapple syrup and vinegar to skillet and heat.
Mix sugar, cornstarch and water and add to hot liquid and cook, stirring until clear and slightly thickened.
Pour over meat mixture.
Cover and bake in 350Β° oven for 20 minutes.
Cook green pepper and onion in butter 3 to 4 minutes.
Add to casserole and bake 10 minutes longer.
