Hash Brown Omelet
Hash Brown Omelet is an moderately easy dinner. Made with 4 slices bacon, 2 c. shredded cooked potatoes, 1/4 c. chopped onion, 1/4 c. chopped green pepper and 4 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In large skillet, cook bacon until crisp.
Leave drippings in skillet; drain bacon and crumble.
Mix next 3 ingredients.
Put into skillet.
Cook over low heat until underside is crisp; add bacon.
Blend eggs, milk, salt and pepper.
Pour over potatoes. Top with cheese and bacon; cover.
Cook over low heat about 10 minutes.
Loosen omelet.
Serve in wedges.
