Harvest Chowder
Harvest Chowder is an moderately easy dinner. Made with 1 c. chopped onion, 1 c. sliced carrots, 2 1/2 c. diced potatoes, 1 c. water and 2 tbsp. chicken bouillon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Simmer onion, carrots, potatoes and water together for about 15 minutes.
Add bouillon, corn (if desired) and cooked bacon. Simmer for about 10 minutes more.
Melt butter in another large saucepan and add flour.
Cook for about 1 minute, then add milk and cheese.
Cook until smooth and thick, then combine with vegetables.
Simmer over low heat until ready to serve.
This can also be put in a crock-pot and simmered on low for several hours after cooking.
