Harvard Beets is an moderately easy dinner. Made with 1 lb. can sliced beets, 1 small onion, sliced, 1/3 c. sugar, 1/2 tsp. salt and 1 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain 1/2 liquid off beets.
Heat with onion until soft. Separately, mix together sugar, salt, cornstarch and vinegar.
Add to hot beets and onion slowly.
Stir as mixture thickens.
