Ground Beef Soup
Ground Beef Soup is an moderately easy dinner. Made with 1 1/2 lb. lean ground beef, 1 medium onion, 3 to 4 c. coarsely chopped cabbage, 1 (46 oz.) can tomato juice and 1 (2 lb.) bag frozen mixed vegetables, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large frying pan, cook ground beef.
Add onion and cabbage and cook until tender. Put ground beef mixture into large pot and add tomato juice, frozen vegetables, water, salt, pepper, parsley and bay leaf.
Bring to a boil and simmer until vegetables are tender.
Bring soup to a boil again.
Add noodles and simmer until noodles are done.
You may add more water if you like it that way.
