Green Pepper Jelly
Green Pepper Jelly is an moderately easy dinner. Made with 6 large peppers, cut into pieces, 1 1/2 c. cider vinegar, 6 c. sugar, 1/2 tsp. salt and 1 tsp. crushed red pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put half the peppers and half the vinegar into blender container.
Cover and process at liquefy until pepper is liquified.
Pour into a saucepan.
Repeat with other remaining peppers and vinegar.
Add the red pepper, sugar and salt.
Bring to a boil and add pectin.
Boil until it thickens when dropped from spoon, about 20 minutes.
Add a few drops food coloring. Pour into sterilized hot jars and seal.
Yields about 4 half-pints.
