Green Chile Rice Casserole
Green Chile Rice Casserole is an moderately easy dinner. Made with 2 c. rice, cooked, 2 (8 oz.) cartons sour cream, 1/2 lb. cheddar cheese, 1/2 lb. monterey jack cheese and 2 cans green chiles (small), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix rice, sour cream, salt and pepper to taste (add onions, if you like).
Add half to Pam sprayed casserole.
Top with grated Monterey Jack cheese.
Cover with diced green chiles, then add layer of grated cheese, Cheddar, then add rice, sour cream, Monterey Jack cheese and chiles.
Bake uncovered 45 minutes at 350Β°.
