In a large saucepan, heat oil; saute onion until transparent. Add garlic and cook 1 minute longer.
Add tomatoes, parsley, mint and oregano and bring to boil.
Snip off ends and any strings from beans.
Add beans to sauce mixture.
Lower heat; cover and simmer until tender, about 30 minutes.
Salt and pepper to taste.
