Grapefruit Wedge Salad
Grapefruit Wedge Salad is an easy dinner. Made with 2 to 3 ruby red grapefruit, 1 large can apricots, 1/2 c. chopped pecans (optional), 1 (3 oz.) apricot jell-o and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Grapefruit in halves.
Remove pulp from rind.
Cut enough segment to make 1 cup.
Squeeze enough juice for 1 cup. Add grapefruit juice to apricot juice (drained from apricots) which will be 2 cups in all.
Heat juice and add to Jell-O and sugar. Cool slightly.
Grapefruit segments, mashed apricots and pecans to mixture.
Fill rind halves with Jell-O and cool.
To serve, each half in quarters.
Serve on fruit leaves or English ivy leaves.
Poppy seed dressing may be used.
Serves 12.
