Grandma's Bean Soup
Grandma'S Bean Soup is an moderately easy dinner. Made with 1 lb. navy or pinto beans (we like pinto), 1 1/2 to 2 lb. smoked ham hocks, 2 qt. water, 1/3 c. catsup and 1/4 c. vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak beans overnight, then drain.
Cook everything except carrots and potatoes.
After bringing to a boil, reduce heat and simmer for about 3 hours.
Put carrots and potatoes in about 1 hour before beans are done.
Remove meat from bones and return to soup. Think of me and enjoy.
Makes 4 to 6 servings.
