Good Luck Beans
Good Luck Beans is an moderately easy dinner. Made with 1 lb. each: pinto beans, small lima beans, split peas, black turtle beans, lentils and black-eyed peas, 1 lb. ham pieces, 1 large onion, chopped, 1 clove garlic and 1 can ro-tel tomatoes and green chilies or plain tomatoes, this recipe delivers authentic, satisfying flavors. Mix 1 pound of each type of bean.
Rinse 1 1/2 cups of mixed beans.
Soak overnight in water.
Drain and add 2 quarts of water and at least 1 teaspoon salt.
Add ham.
Cook slowly for 3 hours. Add onion, garlic, Ro-Tel tomatoes and lemon juice.
Simmer for 2 hours.
Serve with hot cornbread.
