Golden Potato Puff
Golden Potato Puff is an moderately easy dinner. Made with 2 tbsp. soft margarine, for mold, 2 tbsp. yellow corn meal, 4 c. diced, pared potatoes or 3 c. prepared instant potatoes, 6 eggs, separated and 1 c. (2 sticks) margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Coat an 8-cup tube mold well with margarine.
Sprinkle with corn meal, tap out excess.
Cook potatoes in lightly-salted water until tender; drain well.
Shake pan over low heat to dry and fluff potatoes; mash.
Beat egg whites until they stand in firm peaks. Separately beat egg yolks until thick.
