Golden Potato Bake
Golden Potato Bake is an easy dinner. Made with 2 lb. potatoes, peeled (about 6 medium potatoes), 1 (16 oz.) can diced carrots, drained or 2 c. diced carrots, cooked and drained, milk, 2 tbsp. margarine and salt and pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook potatoes in boiling, salted water until tender; drain. Add carrots.
Mash at low speed with electric mixer.
Slowly beat in enough milk to make light.
Stir in margarine and a little salt and pepper.
Turn into a 2-quart casserole.
Dot with additional margarine, if desired.
Bake at 350Β° for 25 minutes.
