Ginny Richards Mother's Rice Pudding
Ginny Richards Mother'S Rice Pudding is an moderately easy dinner. Made with 1 qt. milk, 1 orange peel spiral, 1/2 c. uncooked rice, 1/2 c. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Scald one quart milk.
Add one orange peel spiral, lightly rinsed rice, 1/2 cup sugar and 1/4 teaspoon salt.
Cook 45 minutes; cover part of time.
Remove orange peel and add 1 cup light cream and 2 egg yolks and cook 20 minutes.
Add 1/2 teaspoon vanilla.
Cook until pudding sets.
Can be served warm or chilled. Top with fruit or raisins.
Serves 4 to 5 people.
Can be made several days ahead.
