Ginger Spiced Chicken
Ginger Spiced Chicken is an moderately easy dinner. Made with 1 lb. chicken, cut into thin strips, 2 garlic cloves, minced, 2 tbsp. oil, 1 large red bell pepper, cut into strips and 1 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute chicken and garlic in oil until lightly browned.
Stir in peppers and mushrooms.
Cook and stir until crisp-tender.
Combine water, cornstarch and soy sauce in a small bowl, stirring until smooth.
Stir into chicken mixture.
Add ginger and bouillon cube. Stir in nuts.
Cook and continue to stir over medium heat until mixture thickens and comes to a boil.
Makes 4 servings.
Serve with rice.
