German Style Stuffed Tomatoes
German Style Stuffed Tomatoes is an moderately easy dinner. Made with 3 slices bacon, cut in pieces, 1/2 c. chopped celery, 1/4 c. chopped onions, 2 tbsp. sugar and 3 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook and stir bacon, celery and onions until bacon is crisp; stir in sugar, 1/4 teaspoon salt, vinegar and the potatoes.
Cook, stirring constantly 2 minutes.
Remove centers from tomatoes. Spoon 1/3 cup potato mixture into each tomato cup.
Place in ungreased baking dish.
Bake 15 minutes at 375Β°.
Top each tomato with dollop of sour cream.
Bake 2 minutes longer.
Serve immediately.
