German Red Cabbage
German Red Cabbage is a quick braise of shredded red cabbage with onion, apple, sugar, vinegar, bay leaf, and smoky bacon. The cabbage cooks until tender but still colorful, making a sweet-sour side for sausages, pork, or roast chicken.
Place the shredded cabbage, onion, sugar, salt, bay leaf, and water in a saucepan or Dutch oven.
Bring to a boil, then reduce the heat and simmer for about 20 minutes.
Stir in the red wine vinegar and chopped apple.
Cook for 3 to 4 minutes more, just until the apple softens slightly.
Remove the bay leaf and taste for salt, sugar, or vinegar.
Sprinkle with crumbled bacon before serving warm.
