Funnel Cakes
Funnel Cakes is an moderately easy dinner. Made with 2 c. all-purpose flour, 1 tbsp. sugar, 1 tsp. baking powder, 1/4 tsp. salt and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a deep bowl, stir together flour, sugar, baking powder and salt.
Mix eggs and milk together and pour into dry ingredients. Stir with a whisk until batter is smooth.
Pour shortening into a heavy skillet to the depth of 1/2 to 2 inches.
Heat until hot, but not smoking.
Hold a funnel with a 1/2-inch opening in your hand and keep one finger over funnel end.
Hold funnel over hot oil; remove finger from spout.
Using a slow, swirling motion, dribble batter into center of pan.
Let brown on both sides. Sprinkle with powdered sugar.
