Funnel Cakes
Funnel Cakes is an moderately easy dinner. Made with vegetable oil, 1 1/3 c. milk, 2 1/2 c. self-rising flour, 2 eggs and 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Heat oil (two inches deep) to 375Β° in skillet.
Beat remaining ingredients (except confectioners sugar) until smooth.
Holding forefinger over tip of 1/2-inch diameter funnel pour about 1/2 cup batter, controlling flow with finger, into hot oil, swirling it in circles from the center out.
Fry until light brown and then turn over and fry the other side.
Drain and keep warm.
Sprinkle with confectioners sugar.
Do not keep tightly covered or cakes will become soggy.
Makes approximately 6 cakes.
