Fruited Rice Pudding
Fruited Rice Pudding is an moderately easy dinner. Made with 1 c. crushed pineapple, 2/3 c. precooked rice, 2/3 c. water, 1 1/2 c. miniature marshmallows and 1 ripe banana, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Drain pineapple, reserving syrup.
In saucepan combine rice, water, syrup and salt.
Mix just to moisten rice.
Bring quickly to boiling.
Reduce heat, cover and simmer 5 minutes.
Add marshmallows, pineapple, banana and lemon juice.
Cool thoroughly. Fold in whipped cream.
Chill.
Serves 8 to 10.
