Fruit Cake
Fruit Cake is an moderately easy dinner. Made with 1 lb. oleo, 1 box light brown sugar, 6 eggs, 4 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream oleo and sugar thoroughly.
Beat egg yolks until thick. Blend in.
Mix fruit and nuts (chopped) with 1 cup flour.
Add to mixture.
Sift remaining 3 cups flour and baking powder together. Add in.
Beat egg whites until stiff.
Fold into mixture along with the lemon extract.
Pour into greased and floured tube pan. Cover with foil.
Refrigerate overnight.
Bake in 250Β° oven on top rack with pan of water underneath for first 30 minutes, then remove water and continue baking until tests done.
