Fruit and Macaroni Salad
Fruit And Macaroni Salad is an moderately easy dinner. Made with 1/2 lb. acini de pepe, 1 large can fruit cocktail, 1 large can chunk pineapple, 1 can mandarin oranges and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook, drain and rinse acini de pepe macaroni #27.
Set aside. Drain fruit and save the juice.
To the juice, add 2 beaten eggs, sugar, pinch of salt and flour.
Mix well and cook until thick; be careful not to burn.
Add juice mixture to macaroni and refrigerate overnight.
Shortly before serving, add drained fruit and Cool Whip.
