Frozen Peppermint Cheesecake
Frozen Peppermint Cheesecake is an moderately easy dinner. Made with 1 1/2 c. chocolate wafer crumbs, 1/4 c. sugar, 1/4 c. butter or margarine, melted, 8 oz. cream cheese, softened and 14 oz. sweetened condensed milk (i prefer eagle brand), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine first three ingredients and firmly press into a 9-inch pie plate and chill.
Beat cream cheese at high speed with electric mixer until firm.
Add condensed milk, mint candy and food coloring; beat well.
Fold in whipped cream.
Pour into prepared pan.
Cover and freeze until firm.
Garnish if desired. Yields one 9-inch pie.
