Frozen Lemon Pie
Frozen Lemon Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, grated rind of 2 lemons and the juice, 6 egg yolks, just beaten, 6 egg whites, beaten until stiff and 6 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook the first 3 ingredients in double boiler until thick and cool.
Add 6 tablespoons sugar to egg whites.
Continue to beat until smooth; fold in filling.
Beat cream until stiff.
Fold in filling.
Roll graham crackers very fine; sprinkle on bottom of pie tins and top of filling.
Freeze 4 hours.
