Fried Potatoes
Fried Potatoes is an moderately easy dinner. Made with 4 or 5 medium potatoes, 2 small onions, 2 eggs, beaten, 1/2 c. diced, cooked ham or other leftover meat and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Slice unpeeled potatoes.
Peel and chop onions.
Put oil in cold skillet and heat to about 300Β°.
Scatter potato slices over bottom of skillet.
Cover and cook about 5 minutes.
Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes. Uncover, add chopped onions and water.
Replace cover and cook 3 minutes longer.
Uncover and add eggs and meat.
Stir until eggs are cooked.
Serve warm.
