Fried Catfish
Fried Catfish is an moderately easy dinner. Made with 1/2 c. cornmeal (i use seafood breader), 2 tbsp. self-rising flour, 1 tsp. salt, 1/4 tsp. paprika and 1 lb. catfish, cleaned and dressed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine cornmeal, flour, salt and paprika.
Dry fish thoroughly.
Coat both sides of fish with mixture.
Fry fish in hot oil over low heat, about 4 minutes on each side or until golden brown.
Drain on paper towels.
